One of my parent’s high school friends gave them this AMAZING recipe for a delicious pecan pie … but not only a pecan pie … a CHOCOLATE BOURBON PECAN PIE!
My dad has to have this pie every Thanksgiving and Christmas. It is so rich and delicious and that bourbon gives the sweetness a nice bite. You seriously won’t even believe how easy this recipe is.
Preheat your oven to 350 degrees.
Line a 9 inch pie dish with homemade flaky dough or pre-made dough
– 1 cup of sugar
– 3 tablespoons of cornstarch
– 3 tablespoons of butter (softened)
– ¾ cup of dark corn syrup
– 3 eggs
– 1 tablespoon of vanilla
– 1 teaspoon of white vinegar
– 2 shots of bourbon or whiskey
– 1 ¾ cup of chopped pecans
– 1 cup of chocolate chips
Mix together the sugar and cornstarch. Add the butter and cream this mixture together. Add the syrup, eggs, vanilla and vinegar. Stir in the pecans and the bourbon or whiskey.
Spread all the chocolate chips on the unbaked pie shell. Make sure the chocolate chips are in one layer. Pour your pie filling on top of the chocolate chips.
Bake for 1 hour – 1 ½ hour. If the crust gets too brown, cover the crust with foil, but make sure the filling is exposed.
Let cool and devour!
