Eggnog Butter Cream

This is the perfect butter cream to use during the holidays! It is rich and creamy. I used this on a red velvet/vanilla cake. Surprisingly, this butter cream works very well with red velvet. It is creamy and rich enough that it pairs like the traditional cream cheese frosting.

This recipe is to cover one cake or 24 cupcakes

INGREDIENTS

–          2 sticks plus 2 tablespoons of butter (softened)

–          1 ½ cups of powdered sugar

–          1 teaspoon of vanilla

–          ½ cup of eggnog

With a stand mixer or a hand mixer, start mixing the butter. Add the vanilla then add the powdered sugar ½ cup at a time, alternating sugar and eggnog, until it is all incorporated.

Spread/pipe on the frosting to whatever cake you want! Again, this frosting works well with red velvet!

If you want to make a three layer cake: 5 ½ sticks of butter, 3 cups of powdered sugar, 2 teaspoons of vanilla, and 1 ¼ cup of eggnog. Make the same ways as above!
