25 Days of Christmas Cookies: DAY 21: Soft Ginger Cookies

28071_4353679315099_263980614_nI love ginger… ginger bread, ginger snaps, ginger cookies… I’ll eat it all. These cookies are so yummy and easy and just screams holiday! Make these soon, you won’t be disappointed!


Preheat your oven to 350 degrees

Line two cookies sheets with parchment paper


–          1 ½ stick of butter (softened)

–          1 cup of sugar

–          1 egg

–          ¼ cup of molasses

–          1 tablespoon of water

–          2 ¼ cups of flour

–          1 teaspoon of baking soda

–          3 teaspoons of ground ginger

–          1 teaspoon of ground clove

–          ¾ teaspoon of ground cinnamon

–          Pinch of salt

Combine the flour, spices, baking soda, and salt in a bowl and whisk, and then set aside. Measure the molasses and add the egg and water to the measuring cup and mix, set aside. With a stand mixer or hand mixer, mix together the butter and sugar until fluffy, add the molasses mixture and combine. Then add the flour in three batches. Make sure it is fully combined. In a small bowl, pour ¼ cup of sugar.

Take about a tablespoon scoop of dough and roll it in the sugar. Place the dough balls on the cookies sheet about an inch apart.

Bake for 8-10 minutes. They should still be a little soft in the middle!

Let cool and eat!
