I know I am posting these a couple days late, but I have been traveling through Texas to see the boyfriend, and then to Colorado to be with my parents!
These cookies are very chocolaty and delicious! They come out cake like and the dried cranberries give a good chewiness to the cookies. Feel free to add nuts, chocolate chips, or any other thing that you like!
Preheat your oven to 350 degrees
Line two cookie sheets with parchment paper
– 1 stick of butter (softened)
– ½ cup of white sugar
– ½ cup of brown sugar
– 1 egg
– 1 teaspoon of vanilla
– 1 cup of flour
– ¼ cup of cocoa powder
– ½ teaspoon of baking soda
– Pinch of salt
– 1 cup of dried cranberries
– 2 ounces of white chocolate (chopped)
With a stand mixer or and hand mixer beat the butter and both sugars together. Add the egg and vanilla. In a different bowl, whisk together the flour, cocoa powder, baking soda, and salt. Slowly incorporate the flour mixture into the butter mixture. Once it is all incorporated, mix in the cranberries and white chocolate.
Spoon about 1 tablespoon of dough onto the cookies sheets about 1 ½ inches apart. Baking for 10-13 minutes!
