25 Days of Christmas Cookies: DAY 14: Spice Cake Cookies with Cream Cheese Frosting

Like I said in the last post …. Cake mix cookies have endless possibilities! Today I wanted to make easy cookies again (I’ve been hoppin’ around Texas this last week), so while I was in the baking isle of the grocery store, I thought, “Spice cake! I love spice cake!” Hence the cookies for today!

And no spice cake is complete without cream cheese icing. This is optional, but I wouldn’t skip it if I were you!

START!

Preheat your oven to 350 degrees

Line a baking sheet with parchment paper

INGREDIENTS

Cookies

–          1 box of spice cake mix

–          2 egg yolks

–          1 stick of butter (softened)

With a stand mixer or hand mixer, mix together the egg yolks and butter. Then slowly but surely add the cake mix until incorporated. This batter is very stiff and looks like wet sand, that’s ok!

Make about 2 tablespoon balls of dough, by pressing the dough together with your hands (it will come together!)

Place the dough about an inch from each other, bake for 10 minutes. They will be soft when you take them out. Cool.

Frosting

–          4 ounces of cream cheese (softened)

–          2 tablespoons of butter (softened)

–          ½ teaspoon of vanilla

With a stand mixer or hand mixer, mix the ingredients together until fully combined.

Spread on the cooled cookies!
