25 Days of Christmas Cookies: DAY 10: Butter Jam Sandwich Cookies

Everything is better with butter, these cookie sandwiches are no exception. They are buttery and soft, with sweet butter and jam in the middle. It makes for the perfect treat to satisfy your sweet tooth!!

START!

Preheat your oven to 350 degrees

Line a cookie tray with parchment paper

INGREDIENTS

Cookies

–          2 sticks of butter (softened)

–          ½ cup of powdered sugar

–          1 teaspoon of vanilla

–          1 ½ cups of flour

–          3 tablespoons of cornstarch

Beat together the butter, powdered sugar and vanilla with a stand mixer or a hand mixer. Whisk together the flour and cornstarch, then add this slowly to the butter mixture. Once incorporated, I used a large star tip to pipe the cookie onto the cookie sheet (1 inch diameter). Or you can spoon a tablespoon of batter onto the cookie sheet.

Bake for 17 minutes or until golden. Cool the cookies before filling.

Filling

–          ½ stick of butter (softened)

–          1 teaspoon of vanilla

–          ½ plus ⅛ cup of powdered sugar

–          Jar of jam (I used strawberry, but you can use whichever is your favorite!)

With a stand mixer or hand mixer, beat together the butter, sugar, and vanilla until smooth.

To Fill: take one of the cookies and spread the butter mixture on that half. Spoon about ½ teaspoon to 1 teaspoon of jam into the same cookies (right on top of the butter). Take another cookie and sandwich them!
