Coconut coconut coconut!! I love coconut! These cookies are made with egg whites and they are so airy and light. Try these and everyone will be impressed!
Preheat your oven to 200 degrees
Line one cookie sheet with parchment paper
– 2 egg whites
– ¼ and ⅛ cup of sugar
– 1 ½ cup of shredded coconut
With a hand mixer or stand mixer beat the egg whites until they are at medium peaks, add the sugar slowly until it is fully incorporated. Beat the egg whites until they are at stiff peaks. Folding the coconut and then spoon about a tablespoon of batter onto the cookie sheet, each an inch apart.
Bake for 2 hours.
