Dolce de Leche is so so yummy! So why not put it in a cookie? The recipe is very easy, but if you make your own Dolce de Leche, it will take a while. If you don’t have the time, just buy prepared Dolce de Leche or caramel sauce.
Preheat your oven to 325 degrees
Line two cookie trays with parchment paper
Dolce de Leche
– One 16 ounce can of sweetened condensed milk
Over a double boiler, pour the condensed milk into the pan, and heat on low heat. This will cook for about 2 – 2 ½ hours, stir every 30 minutes
– 2 sticks of butter (softened)
– ⅔ cups of sugar
– 2 large egg yolks
– 2 tablespoons of honey
– 2 teaspoons of vanilla
– Pinch of salt
– 1 ¾ cup of flour
With a stand mixer or a hand mixer cream together the sugar and the butter. Add the eggs, honey, and vanilla, and mix. Add the salt, and then add the flour slowly. Once it is all combined, spoon about a tablespoon on the cookie trays. Place each about an inch and a half apart.
Cool the cookies.
Add a dollop of the dolce de leche sauce in the middle of each cookie!
