25 Days of Christmas Cookies: DAY 7: Pizza Cookie with Cream Cheese Frosting

Everyone loves a humungous cookie! This is such an easy cookie to make and is perfect for birthdays or to make with any little ones that are around. You can mix this recipe up by coloring the frosting however you want and adding whichever candies on top you like. Try this, especially if there is a birthday!


Preheat your oven to 350 degrees

Line a pizza tray or baking tray with parchment paper



–          1 stick of butter (softened)

–          1 cup of sugar

–          1 egg

–          1 teaspoon of vanilla

–          1 ½ cup of flour

–          ½ teaspoon of baking soda

Whisk together the flour and baking soda and set aside. With a stand mixer or a hand mixer start mixing the butter and sugar together. Add the egg and vanilla and mix again. Slowly add the flour mixture into the egg mixture until it is fully incorporated.

Press the dough into a circle shape about ¼ to ½ thick. Bake for 17 minutes! Let cool.

Cream Cheese Frosting

–          1 stick of butter (softened)

–          4 ½ ounces of cream cheese (softened)

–          2 cups of powdered sugar

–          1 teaspoon of vanilla

In a stand mixer or with a hand mixer cream together the butter and cream cheese. Add the powdered sugar ½ cup at a time, until the full 2 cups are incorporated, then add the vanilla and mix. Color the frosting however you would like!

Using a spatula or knife, spread on the cooled cookie. Add whatever sprinkles or candies you would like! Anything mini would be great (mini M&Ms, chopped reeses, chopped nuts, mini chocolate/white chocolate chips).
