25 Days of Christmas Cookies: DAY 4: Chocolate Peppermint Fudge

Ok so I broke the rules a little bit…. Instead of cookies I made some fudge! I’m a waitress and the restaurant had their holiday party last night and I didn’t want to just show up with cookies, I wanted something more special. I always make this fudge, it so easy. You may be thinking … “fudge? How is that easy?” but it is! This fudge only requires about 10 minutes of work time! Its also awesome, because you can change this recipe to fit whatever you like. Instead of candy canes, you can add nuts, marshmallows, peanut butter, dried fruit…. Anything.

START!

Get a medium sauce pan

Line a 9×9 cake pan with parchment paper

INGREDIENTS

–          2 tablespoons of butter

–          ⅔ cup of condensed milk

–          1 ⅔ cups of sugar

–          Pinch of salt

–          1 ½ cup of chocolate chips

–          1 teaspoon of vanilla

–          4 crushed candy canes

Combine the butter, milk and sugar in the sauce pan over medium heat. Bring the mixture to a boil, once at a boil, stir constantly for 5 minutes. Remove the heat and add the vanilla and chocolate chips. Stir until it is all melted, then add the candy canes and mix. I saved a little of the crushed candy canes to put on top of the fudge. Pour the fudge into the cake pan. Then top with the rest of the candy canes and put in the refrigerator for 2 hours or until set.
