25 Days of Christmas Cookies: DAY 1: Peppermint Brownie Crisp Cookies

25 days of Christmas cookies…. CHALLENGE ACCEPTED! 25 days, 25 cookies, this may be difficult but I’m up for the challenge. Since today is December 1, I had to start making cookies. Yesterday, I went to the grocery store and prepared myself for all the baking I will be doing, stocking up on butter, sugar and flour.

What screams Christmas more than peppermint?! And what goes well with peppermint? CHOCOLATE of course! I had to kick this challenge off with amazing peppermint brownie crisp cookies. And the recipe is so incredibly easy, it’ll shock you.


Preheat your oven to 350 degrees

Line 2 cookie sheets with parchment paper (makes about 24)


–          6 ounces of butter (chopped)

–          2 ounces of unsweetened chocolate (chopped)

–          1 large egg

–          3 tablespoons and 1 teaspoon of flour

–          1 teaspoon of vanilla extract

–          ½ teaspoon of peppermint extract

–          ¼ teaspoon of cinnamon

–          Pinch of salt

Melt the butter and chocolate in a microwave safe bowl (takes about 1 minute), stir and make sure it is all smooth and melted. Add the egg and mix, and then add the flour and extract and cinnamon. DONE!

Then spoon about a tablespoon of batter on the cookie sheets, make sure they are at least 2 inches apart (the cookies spread quite a bit). Bake for about 7 minutes, until the edges are crispy. Let cool on the cookie sheet, then transfer them onto a cooling rack and continue to cool until they cookies are not bendable anymore. Enjoy!
