I know what you may be thinking… Do I only like cakes? The answer is NO, I cannot pass up a nice gooey chewy chocolate chip cookie…. I mean, who cant? Chocolate chip cookies are so great, because they don’t require anything out of the ordinary. I guarantee you most likely have all these things on hand at all times, but if you don’t, you better start having these ingredients on hand 24/7.
If you like those chocolate chip cookies that are all flat and crispy… GET OUT OF HERE, we can’t be friends. Personally, I can’t stand a flat crispy cookie, what’s the point in eating a cookie if it’s not soft and fluffy clouds of chocolate chip heaven?
This is my recipe, if you agree with cookie heaven. I decided to add pecan, because I am in Texas, and we love our pecans (of course, the nuts are completely optional).
Preheat your oven to 350 degrees
Line a cookie tray with parchment paper
– 1 ¼ cup of flour
– ¼ teaspoon of baking soda
– ¼ teaspoon of salt
– 7 tablespoons of butter (softened)
– ¼ cup plus ⅛ cup of packed light brown sugar
– ⅛ cup of white sugar
– 1 teaspoon of vanilla
– 1 large egg
– 3 tablespoons of sour cream
– 1 cup of chocolate chips (milk or semi sweet)
– ½ cup of chopped pecans (optional)
In a stand mixer or with a hand mixer, mix together the butter and both types of sugar until light and fluffy. In a different bowl, mix together the flour, baking soda, and salt. Into the butter and sugar mixture, add the egg and vanilla. Then add a third of the flour mixture, then add 1 tablespoon of sour cream, then another third of flour, then a tablespoon of sour cream, then the last portion of flour, then the last tablespoon of sour cream.
By hand mix in the chocolate chips and pecans. Place that dough on the cookie sheets! I use a small ice cream scoop, about 2 tablespoons per cookie. Leave that dough in balls! Don’t you freaking dare try to push it down or flatten it at all! If you do this, I will find you and it won’t be pretty!
By doing this, you will get fluffy, soft and thick cookies!
Put in the oven for 12 minutes …. AND ONLY 12 MINUTES!
NOTE: One little trick to cookies, which you can apply to premade cookie dough as well, is to take them out of the oven when they still look a little gooey. Usually about 2 minutes before the package says to. They will keep cooking a bit as they cool down, this way you will get gooey soft cookies.
Let cool, or eat warm!
