Do you like Chai Tea? If you don’t … YOU SHOULD. Next time you’re at a coffee shop try a chai tea latte, and I guarantee you will fall in love. It’s like Christmas in a cup, spicy and warm! Chai has spices like cinnamon, clove, and ginger, so unique and yummy.
I try to make cupcakes out of EVERYTHING I love! So I had to come up with some way to incorporate chai tea into a cupcake. And what’s better with tea than honey?! This cupcake is sweet, spicy and delicious. No one would guess how easy this is….
Preheat your oven to 350 degrees
Line a cupcake tin (12 cupcakes)
– 1 ½ cup of flour
– 1 ½ teaspoon of baking powder
– ½ teaspoon of salt
– ½ cup of milk plus 2 tablespoons (to steep the tea, you need a little extra for evaporation)
– 1 teaspoon of vanilla
– 1 stick of butter (softened)
– ¾ cup sugar
– 2 large eggs
– 3 Chai Tea bags (I use Tazo, you can find this at Wal-Mart)
Start by putting the milk (½ cup plus 2 tablespoons) in a sauce pan over medium low heat with the three tea bags in the milk. Let me milk come to a simmer. Simmer for about 5 minutes, and then let it cool with the tea bags for 30 minutes. Then add the vanilla to the milk.
Combine the flour, baking powder, and salt in a bowl and whisk together. In a larger bowl (with a stand mixer or hand mixer) mix together the butter and sugar. Add the eggs one at a time. Add a little of the flour mixture and incorporate, then add a little milk mixture and incorporate, alternate these until everything is incorporated.
NOTE: Try the batter at this point. If it is not spicy enough for you add: 2 teaspoons of cinnamon, ¼ teaspoon of ground clove, and ¼ teaspoon of ground ginger.
Divide the batter among the cupcake tin. Filling the 12 molds about ¾ full.
Bake for 12-14 minutes.
Honey Butter Cream
– 1 stick and 3 tablespoons of butter (softened)
– 1 cup of powdered sugar
– ¼ teaspoon of vanilla
– 1 tablespoon of heavy cream
– 2 tablespoons of honey
In a stand mixer or with a hand mixer, start beating the butter. Slowly add ½ cup of powdered sugar. Add the vanilla. Then add the remaining ½ cup of powdered sugar. Add the heavy cream, and then add the honey.
Once it is all combined, either pipe it on the cupcakes or pile it on!
I decorated the cupcakes with chopped pecans, adding a little crunch!
