Sugar Crusted Strawberry-Banana Muffins

Again, I know this is not a dessert, but its baking and I love ANYTHING baking. Breakfast is definitely not my favorite meal of the day. Any type of eggs or sausage just grosses me out. I like to indulge in all the bad and unhealthy types of breakfast foods! As you see, I like CARBS for breakfast, but this recipe includes fruit so it’s healthy, right?

Anything I can do really quickly is perfect for me! Muffins are easy and super fast. I had all these ingredients on hand already and that is how I thought of Strawberry-Banana muffins. I love strawberry-banana smoothies, so I usually have frozen fruit in the freezer, and that is what I used in this recipe.

So turn on the coffee pot and GET GOIN’!


Preheat the oven to 400 degrees

Line or butter a muffin tin (I got 11 muffins this morning)


–          1 ½ cups of flour

–          ¾ cup of white sugar

–          ½ teaspoon of salt

–          2 teaspoons of baking powder

–          ⅓ cup of vegetable oil

–          1 egg

–          ½ cup of whole milk

–          1 cup of chopped frozen strawberries and bananas

–          3 extra tablespoons of sugar

Combine the flour, sugar, salt, and baking powder in a large bowl and whisk together. In a small bowl combine the vegetable oil, egg, and milk and whisk together. Add the liquid mixture to the dry mixture and combine.

TIP: DO NOT OVER MIX! (This will make tough muffins, ew)

Add in the fruit and fold into the batter. Divide the batter amongst the muffin tin and fill each about ¾ full. Sprinkle the 3 extra tablespoons of sugar onto the top of the batter in the tins. This creates a sugary, yummy crust!

Put into the 400 degree oven for about 15-20 minutes. Then, make a cup of coffee from that pot I told you to make earlier!!!

Once the muffins are done, eat warm or room temp.
