NOTHING screams summer like s’mores… but this recipe does not call for a fire or camping! I love love love, I mean LOOOOOOVE making these to ring in the summer season. I first made these two years ago to bring to my boss’s barbeque party. Everyone thought I took so much time and effort to make these delicious treats, but it’s easy! Everyone will say, “What a clever little baker this fellow must be!” and you’ll say, “Oh its nothing!” and they will think you’re just being modest, but you’ll be laughing silently to yourself, because YOU know it actually was nothing! (muuhahahahaha!)
After I made these once, I couldn’t stop, so I’ve made them every summer since.
EVERYONE WILL BE ASKING FOR S’MORE! (Pun intended)
Preheat your oven to 350 degrees
You’ll need an 8 inch square baking dish
Cooking spray or butter
– 1 stick of unsalted butter (1/2 cup) (room temp.)
– 1/4 cup light brown sugar (packed)
– 1/2 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 tablespoon of cinnamon
– 1 1/3 cups all-purpose flour
– 3/4 cup graham cracker crumbs
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 3 or 4 milk chocolate bars (and maybe an extra to eat while you wait)
– 1 1/2 cups marshmallow Fluff (DO NOT try melting marshmallows, it doesn’t work)
In a bowl, cream together butter and sugar until light. Beat in the egg and vanilla. In a different bowl, combine flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the buttered pan.
Place chocolate bars over dough (break them to fit, then break off 1 square and eat it NOW), then spread the marshmallow fluff over the chocolate bars. Then, top the fluff with the remaining dough by forming the dough into flat pieces with your hands and laying it down. Don’t worry if the dough isn’t covering everything! It’ll spread out as it bakes.
Bake for 30-35 minutes, until lightly browned.
TIP: If the top is browning too quickly, you can always cover it with tin foil for the remaining baking time.
Cool completely before cutting into bars, if not they may fall apart!
