Easy as Pie … Mini Pumpkin Pies

This recipe is EASY AS PIE! Seriously….This is probably the easiest thing I’ve ever baked! During the holiday season I wanted something cute and small to give to my girlfriends to say how thankful I am for their friendship.

I love these because you’ll totally look like the coolest, cutest, most creative person out there (but, you probably are anyway)!

… and your friends will post pics on InstaGram at wine bars about the deliciousness

START!

This should yield about 48 mini pies

Preheat your oven to 350 degrees

You’ll need a mini cupcake pan which you can find at Wal-Mart, Target, or any store like that. I use mini cupcake tins a ton!

Cooking spray or butter

Ingredients

–          2 premade pie doughs (found in the refrigerated aisle with all the cookie dough. I know you know where that is)

–          1 can of pumpkin pie filling (plus what is needed on the can. Usually condensed milk and an egg, but check before checking out!)

That’s all you need…. FOR REAL!!!

Mix together the pumpkin pie filling, according to the can, in a bowl, set aside. Unravel the pie dough on a cutting board sprinkled with a little flour (to prevent sticking). Use a 2 inch cookie cutter to cut out as many circles from the dough as you can!

Spray your tin with cooking spray! Or butter them …. Whichever tickles your fancy.

Place 1 dough circle into each cupcake mold in the tin (making the dough a little pie cup!). With a fork, prick the bottom of the dough (this will help it not puff up too much).

FILL THOSE PUPPIES WITH PUMPKIN PIE FILLING!

Place in the oven for 15- 20 minutes or until the crust is golden and the filling is slightly wiggly (it will set up once it cools)

Place in pretty packages with pretty bows! Or eat them all at once!
